Vegan Chocolate Chip Cookies

280 grams of Vegan butter (I use the solid blueband)

180 grams of Light brown sugar

180 grams of White Sugar

1/2 teaspoon of salt (more if you like 'em salty)

2 teaspoons of Vanilla extract/sugar

2 to 3 tablespoons of Plant based milk (if using a liquid vanilla use 2 if it's a powder use 3)

440 grams of All purpose flour

1 teaspoon of Baking soda

1 teaspoon of Baking powder

250 grams of Chocolate chips

 

  1. Make sure your butter is room temperature, then add both sugars, salt, vanilla and milk to the butter. Mix with an electric mixer for about 3 minutes.

     2.  Add the flour, baking powder and baking soda and use your hands to knead until combined.

     3.  Add the chocolate chips and mix through.

     4.  Now ideally you'd want to let your dough rest for at least an hour in the fridge, so you can wrap it up until ready to bake. I also love to already portion the dough (between 50 and 75grams per cookie) that way it's super easy to batch make them whenever you crave cookies!

     5.  Pre-heat oven to 180 degrees Celsius, then put them on a baking sheet (not too close together because they will flatten, also don't press them) and bake until light golden brown. Depends highly on your oven, but usually between 11 and 16 minutes.

Now they just have to cool for a couple minutes and they'll be ready to enjoy!
